When making vegetarian burritos it’s important to use flavorful and filling ingredients. It’s also important to make sure you’re adding some protein to the burrito since there is no meat and you don’t want to feel hungry after eating a big burrito. The best way to achieve these goals is to load your burrito with veggies that you enjoy as well as beans that are a good source of protein. This recipe is a great jumping-off point but don’t hesitate to add your favorite ingredients to make this burrito one of your favorites.
Black Beans

In this recipe, I am using canned black beans because they are quick and easy to prepare and taste amazing. If you aren’t a fan of black beans you can also try red beans, pinto beans, or refried beans if you want some other good options. If you are feelings adventurous you can make homemade refried beans.
The Peppers

I am using 3 different peppers in this recipe. Green bell pepper, red bell pepper, and poblano pepper. If you prefer using different peppers or just want to double down on one type of pepper then feel free to do so. I just prefer having some variety and color in my food and these peppers fill that need.
Tomatoes

I’m dicing up some Roma tomatoes for this dish but you can use any variety of tomatoes you like. If you’re in a pinch you can use canned tomatoes as well.
Onion

Keeping it simple here with just a diced white onion
Guacamole
Doesn’t seem right to have a burrito without some guacamole. You can make your own or use store-bought for convenience purposes.
Cilantro Lime Rice

We are making cilantro lime rice for this recipe. It adds great flavor to this burrito rather than using plain white rice. If you aren’t familiar with cilantro lime rice don’t be worried, it’s a simple method of adding cilantro, lime juice, and lime zest to your rice to give it more flavor. Any variety of rice will work, but I am using Jasmine Rice as it is my favorite and has a great texture but you can use long grain white rice, brown rice, or any of your favorites
Flour Tortilla

Any Tortillas will work depending on your preference but I am using a burrito-sized flour tortilla for this dish. If you want to make your own flour tortillas check out my recipe for flour tortillas here.
Broth
As these burritos are vegetarian we are using vegetable broth.
Seasoning
For the seasoning, I am using a combination of salt and pepper with a taco seasoning mix.
Cheese
I’m using shredded Monterey Jack cheese in this vegetarian burrito recipe because it pairs well with the peppers and black beans but you can use any cheese of your liking.

- 1 Cup Jasmine Rice
- 1/4 Cup Vegetable Broth
- 4 TBSP Guacamole

- 1 Taco Seasoning Packet
- 1 TBSP Olive Oil

Step 1
Start by making the pico de gallo. Cut the onion in half and dice one of the halves. place in a bowl. Dice the tomatoes and as much cilantro as is desired and mix them in with the onion. Add a pinch of salt and juice from half of the lime (zest the lime first and set aside for the rice).

Step 2
Begin cooking the rice using your method of choice. I am using a pressure cooker because it consistently cooks my rice perfectly without me having to keep an eye on it.

Step 3
Next thinly slice the other half of the onion, bell peppers, and poblano pepper. Thinly slicing your peppers helps them cook faster.
Step 4
Preheat Skillet to medium-high heat and add the peppers and onion with the olive oil. Cook 5-6 minutes until peppers begin to soften.

Step 5
Add black beans, vegetable broth, and taco seasoning to the peppers and stir. Bring to a simmer and cook for another 5-6 Minutes then remove from heat.

Step 6
Once the rice is done add lime zest and squeeze the other half of the lime juice into the rice. Add the desired amount of cilantro, salt, and pepper to the rice and mix.

Once everything is prepared build your burrito using the tortilla 1/4 of all the ingredients and any extra toppings of your choice.

It also helps to use reduced fat or fat-free options to lower the calories. Low-Carb tortillas are also a great option.
