Ingredients

  • 1 lb Chicken tenderloin or chicken of choice.
  • 1 ½ cups Cauliflower rice
  • 2 tbsp Teriyaki sauce
  • 1 tsp Garlic powder
  • 2 tbsp Low sodium soy sauce
  • 1 tbsp Chives (optional)
  • 1 tbsp Toasted sesame seeds (optional)

  1. Layout chicken and pat dry to remove any unnecessary moisture.
  2. Cut chicken into 1-inch pieces, and place in the bag.
  3. Add teriyaki sauce to bag, seal, and shake to coat.
  4. While the chicken rest in the sauce preheat your pan to medium to medium-low heat.
  5. Lightly spray the pan with oil and add your cauliflower rice.
  6. Cook rice until tender for 4-5 minutes and then add in your garlic powder and soy sauce. Stir to coat and cook for 1-2 more minutes.
  7. Remove rice from the pan and place it on a plate. Turn heat to medium to medium-high and return pan to stove.
  8. Add chicken to the pan evenly and cook for 5-7 minutes, stirring occasionally.
  9. Once the chicken is done layer it over the rice. Top with chives and sesame seeds (optional)

Notes

  • The longer you can let the chicken marinate the more flavor you will get out of it.
  • This recipe is made to be a lower calorie option but you can always make substitutions to meet your personal needs.
  • Try mixing both regular rice and cauliflower rice together to get the best of both worlds.
