Ingredients
- 1 lb Chicken tenderloin or chicken of choice.
- 1 ½ cups Cauliflower rice
- 2 tbsp Teriyaki sauce
- 1 tsp Garlic powder
- 2 tbsp Low sodium soy sauce
- 1 tbsp Chives (optional)
- 1 tbsp Toasted sesame seeds (optional)

What we used:
- Frying pan
- Measuring spoons
- Knife
- Spatula
- Quart sized baggie
Directions
- Layout chicken and pat dry to remove any unnecessary moisture.
- Cut chicken into 1-inch pieces, and place in the bag.
- Add teriyaki sauce to bag, seal, and shake to coat.
- While the chicken rest in the sauce preheat your pan to medium to medium-low heat.
- Lightly spray the pan with oil and add your cauliflower rice.
- Cook rice until tender for 4-5 minutes and then add in your garlic powder and soy sauce. Stir to coat and cook for 1-2 more minutes.
- Remove rice from the pan and place it on a plate. Turn heat to medium to medium-high and return pan to stove.
- Add chicken to the pan evenly and cook for 5-7 minutes, stirring occasionally.
- Once the chicken is done layer it over the rice. Top with chives and sesame seeds (optional)

- The longer you can let the chicken marinate the more flavor you will get out of it.
- This recipe is made to be a lower calorie option but you can always make substitutions to meet your personal needs.
- Try mixing both regular rice and cauliflower rice together to get the best of both worlds.
