All you need is some flour tortillas, enchilada sauce, shredded cheese, ground beef, diced tomatoes, and any of your favorite toppings to customize it to your liking.
Tortilla

We are using carb-smart soft taco-sized flour tortilla shells for this Mexican pizza recipe but you can use regular flour tortillas or burrito-sized tortillas for a larger pizza.
Enchilada sauce

I am using canned enchilada sauce for this recipe in order to make prep and cook time go faster. If you prefer homemade and have the extra time to make it then your results may be better.
Ground Beef

I am using 93% lean ground beef in this recipe in order to keep the calories lower. You can of course use any ground beef of your choice.
refried beans

Once again I am cheating and using canned refried beans here for efficiency and to keep the recipe as close to the original as possible but if you want to make your own refried beans you can.
Shredded Cheese
For the cheese in this recipe I am using reduced fat Mexican cheese. Other good options might be colby jack or pepper jack cheese.
Taco Seasoning

Time to season the meat and it doesn’t get any easier than tossing some taco seasoning mix in. You can also use homemade taco seasoning if you prefer instead of a taco seasoning packet.
Toppings

The original pizza uses diced tomatoes which are also used in this recipe but the great thing about making this at home is you can experiment and add any toppings you like such as olives and green onions. So go crazy and have fun with it.
Give Your Pizza A Spicy Twist
If you like your food with a little bit of heat, try adding some diced jalapenos or green chilies to the mix. You can also add some hot sauce to the enchilada sauce or use it as a finishing topping.

- 8 Carb Balance Tortillas ( or tortillas of your choosing)
- 1/2LB Ground Beef
- 1/2 Package Taco Seasoning
- 8 oz refried beans
- 4 oz enchilada sauce
- 1 Cup Reduced Fat Mexican Cheese
- Toppings of choice ( I used tomatoes and olives)

What Tools You Will Need:

Step 1
Dice tomatoes, olives, or any other toppings you are going to use and set them aside.

Step 2
Preheat the oven to 400 degrees.
Step 3
Preheat your pan over medium-high heat and add 1-2 tablespoons of oil. Once the oil is heated cook your tortillas on both sides flipping frequently until crispy. Remove and place on a wire rack or paper towels.

Step 4
Add beef to preheated skillet and brown until almost all pink is gone. Drain any excess grease. Add taco seasoning and recommended water then stir until mixed. Remove from heat.

Step 5
Microwave or Cook refried beans as directed by the packaging. Remove from heat.

Step 6
Assemble your pizzas by adding a layer of refried beans using 1/4 of the beans and 1/4 of the seasoned ground beef on top of that. Next place the second tortilla on top of the beans and beef and spoon 1 ounce of enchilada sauce onto the tortilla. Next, add cheese and toppings.

Step 7
Once all of your pizzas are assembled place them on a baking sheet and put them in the oven for 5-7 minutes or until done to your liking and the cheese is melted.

Notes:
- If you prefer to save some calories on oil. Lightly spray each side of the tortillas with oil and then fry them in the pan or don’t use oil at all. Your tortillas might not be as crispy if you don’t use oil.
- If you want to add even more flavor, mix in an ounce of enchilada sauce and a spoon full of taco seasoning to your refried beans.
- Make sure your tortillas are crispy to your liking before assembling your pizzas. 90 percent of you crispiness comes from this step and the oven simply finishes them off.
