Eggs

I am adding two hard-boiled eggs to this ranch pasta salad for some protein. You can however leave them out if you prefer.

Ingredients:

  • 8 Ounces Elbow Macaroni Pasta
  • 2 Hard Boiled Eggs
  • 1 Red Bell Pepper Diced
  • 2 Celery Sticks Diced
  • 1 Whole Pickle Diced
  • 1 Ranch Seasoning Packet
  • 1/2 Cup Light Mayonnaise
  • 1/2 Cup Non-Fat Greek Yogurt (or sour cream)
  • 1-2 TSP Olive Oil

  1. Cook and drain pasta as directed on the packaging and place pasta in a mixing bowl. Add 1-2 TSP of olive oil and stir to prevent the noodles from sticking.
  2. Mix the mayonnaise, yogurt, and ranch seasoning in another bowl and then mix into the noodles until coated evenly.
  3. Dice eggs, celery, pickles, and bell pepper. Add to the macaroni salad and mix well.
  4. Refrigerate for at least 1-2 hours for best results.
  5. Serve and Enjoy!

  • Add some salt and pepper to the the salad after you have tasted it to avoid over seasoning it.
  • Add some rotisserie chicken to your salad for a quick way to add protein and make it a complete meal.
