I am using both sharp cheddar and mozzarella cheeses for this grilled cheese sandwich as they are both creamy, melty, and perfectly flavorful when grilled. You can also use any other type of shredded cheese such as Swiss or gouda too! Freshly shredded cheese works perfectly for grilled cheese as the cheese melts evenly and has a better overall texture than sliced cheese.
Salt & Pepper

- 1/8 Cup Shredded Sharp Cheddar Cheese

Preheat the frying pan to medium-low heat. Spread Mayo on 1 side of both slices of your bread covering the bread from edge to edge.

Lay one slice of bread mayonnaise side down into the frying pan. Add the mozzarella, red pepper, and cheddar cheese. Season with salt and pepper to taste. Gently press the second slice of bread on top and cook for 2-3 minutes until the bottom piece of bread is golden brown.
