The best-grilled cheese sandwich has melty cheese and perfectly toasted golden brown bread. In this recipe, mayonnaise helps with toasting the bread and roasted red peppers add an amazing new twist to a classic grilled cheese.

I prefer to use sourdough bread for my grilled cheese sandwiches. Its slightly sour flavor and chewy texture give grilled cheese a unique, delicious taste but if you are not a fan of sourdough bread you can use any of your favorite breads and still get an amazing result.

Mayo

Mayo is the secret ingredient of this grilled cheese sandwich. It adds a savory richness that can’t be found in traditional grilled cheese recipes. Mayo also has the benefit of being lower in calories than butter as most butter has 100 calories per tablespoon. I am using light mayo for this recipe because it yields amazing results and lowers the overall calories of the sandwich. If you are not concerned with calories then any mayo will work perfectly.

Roasted Red Peppers

Roasted red peppers give grilled cheese a sweet, smoky flavor that is sure to satisfy They also add a nice crunch and pleasant color to the sandwich. If you don’t have roasted red peppers on hand, grilled bell peppers, grilled jalapeño, or tomato will work as well.

Cheese

I am using both sharp cheddar and mozzarella cheeses for this grilled cheese sandwich as they are both creamy, melty, and perfectly flavorful when grilled. You can also use any other type of shredded cheese such as Swiss or gouda too! Freshly shredded cheese works perfectly for grilled cheese as the cheese melts evenly and has a better overall texture than sliced cheese.

Salt & Pepper

To finish off our grilled cheese recipe, I recommend adding just a pinch of salt and pepper to bring out the flavors of the roasted red peppers and mayo. This is an optional step but it really does elevate the grilled cheese to a whole new level.

  • 2 Slices Sourdough Bread
  • 1 oz Roasted Red Peppers
  • 1/8 Cup Shredded Sharp Cheddar Cheese
  • 1/8 Cup Shredded Mozzarella Cheese
  • 2 Tbsp Light Mayo
  • Salt & Pepper

Step 01 

Preheat the frying pan to medium-low heat. Spread Mayo on 1 side of both slices of your bread covering the bread from edge to edge.

Step 02 

Lay one slice of bread mayonnaise side down into the frying pan. Add the mozzarella, red pepper, and cheddar cheese. Season with salt and pepper to taste. Gently press the second slice of bread on top and cook for 2-3 minutes until the bottom piece of bread is golden brown.

Step 03

Gently flip the sandwich over and cook on the other side for another 2-3 minutes or until both sides are golden brown and the cheese is melted.

  • Cook on medium-low to low heat in order to give the cheese time to melt and cook without burning the bread.
  • Check the bottom slice of bread occasionally with a spatula to avoid burning the bread.
