Breakfast Egg Sandwich Recipe (Simple & Delicious)

In this recipe, I’ll show you how to upgrade your egg sandwich with just a few ingredients that will take your ordinary breakfast and give it a twist—one that’s sure to be a hit.

There are many ways to make an egg sandwich, you can use hard-boiled eggs, scrambled eggs, or even make an egg salad sandwich. In this recipe, I am making a breakfast egg sandwich but giving it an upgrade by making an egg patty that’s filled with spinach and tomato and topped with aged white cheddar.

You can’t make an egg sandwich without cracking a few eggs first. I combine the egg with the vegetables in this recipe to create a breakfast egg patty that’s filled with vegetables using an egg ring.

Bacon

Bacon adds a smoky, savory flavor to this egg sandwich and some extra protein. Whether you fry it in the same pan as your egg patty or layer it on top of the egg sandwich after assembly, bacon is an egg sandwich classic. You can substitute this with ham or any other breakfast meat of choice if you prefer or leave it out altogether if you are trying to make a vegetarian sandwich.

Muffin

The muffin is the base of the egg sandwich and is best if it is slightly toasted. I am using a regular English muffin in this recipe but you can change it up with sourdough, whole wheat, or use a bagel if you prefer.

Veggies

I am using spinach and cherry tomatoes to help build this egg patty in this recipe. You can get creative with this and substitute or add more veggies if you like. Some other good options would be mushrooms, peppers, onions, or even jalapenos.

Cheese

Cheese is always a welcome addition when making an egg sandwich. I am using aged white cheddar cheese for this egg sandwich because it makes sense to upgrade the cheese as well as the egg, but you can use any cheese of your choosing, such as Swiss, mozzarella, or even smoked gouda.

Seasoning

I am using salt and pepper to season the veggies and the egg. You can adjust this as you prefer and also add some other seasoning for more flavor. Some good options would be garlic powder, onion powder, basil, paprika, or cayenne for some heat.

  • 1 English Muffin
  • 1 Egg
  • 1 Slice of Bacon
  • 1 Slice of Aged White Cheddar
  • 4-5 Cherry Tomotoes
  • 1 Cup Baby Spinach
  • Salt & Pepper to Taste

Step 01

Cut and quarter the tomatoes and beat the egg in a small bowl or measuring cup.

Step 02

Preheat the frying pan to medium heat and add bacon. Cook until done to your liking and set aside on a paper towel to drain excess grease.

Step 03

Heat the frying pan to medium-low heat and add a drizzle of olive oil, spinach, and tomatoes. Season the veggies with a generous amount of salt and pepper and cook until the spinach is cooked down, push the veggies to the side of the pan.

Step 04 

Add an egg ring to the pan keeping the heat on medium-low. Add half of the egg to the egg ring. Spoon in the veggies and add the other half of the egg to the egg mixture. Season with salt and pepper. Cook for 4-5 minutes or until the top of the egg is semi-firm and not overly runny. Remove the egg ring, flip the egg, add the cheese, and cook an additional 1-2 minutes or until the cheese is melty.

Step 05

Lightly toast the muffin and add the egg patty and bacon to the muffin. Serve Immediately & Enjoy!

Notes

  • Cover the pan with a lid to help cook the egg faster.
  • Be sure to cook on a lower heat than you normally would with eggs as it will take longer to cook through.
  • Lightly coat your muffin with butter or mayonnaise if you aren’t a fan of a dry egg sandwich.
  • Add some hot sauce to your egg patty if you want a little heat.
