Chicken

  • 1 Lb Chicken Breast, Cut Into 1-Inch Pieces
  • 3/4 Cup Non-Fat Greek Yogurt
  • 1 Tbsp Garam Masala
  • 1 Tbsp Salt

Curry

  • 1 Diced Shallot
  • 1 Knob Fresh Ginger, Grated
  • 4 Cloves Garlic, Minced
  • 1 Tbsp Vegetable Oil or Olive Oil
  • 1 Tbsp Garam Masala
  • 1 Tbsp Curry Powder
  • 1/2 Tbsp Paprika
  • 1/2 Tbsp Cumin
  • Salt & Pepper To Taste
  • 1/2 Cup Heavy Cream (or coconut cream if preferred)
  • 1 15oz can of crushed tomatoes
  • 1 Tbsp Unsalted Butter
  • Fresh Cilantro (if Desired)

Rice

  • 1 1/2 Cups Steamed Basmati Rice

Step 01

Cut the chicken breast into 1-inch pieces. Add the Greek yogurt, garam masala, and salt to a mixing bowl and mix until combined. Add the chicken breast, mix, and set to the side.

Step 02

Begin steaming your rice. Finely dice the shallot and garlic cloves and set aside. Grate the ginger and set aside.

Step 03 

Preheat a frying pan to medium-high heat and add the chicken in an even layer. Cook for 2-3 minutes on each side until almost completely cooked and browned. Remove from heat and set aside.

Step 04

Add the frying pan back to the stove and adjust the heat to a medium heat. Add the vegetable oil, shallot, garlic, and ginger and cook for 2 minutes until fragrant.

Step 5

Deglaze your pan with 2 tbsp of water. Add the garam masala, curry powder, paprika, cumin and mix. Add the crushed tomatoes and chicken. Stir, cover, and reduce heat to medium-low. Simmer 2-3 minutes.

Step 06

Remove the lid and stir in the heavy cream. Bring to a simmer and cook for 2 minutes. Turn off the heat and stir in the butter until melted.
