They’re a breakfast staple, and they can also be a delicious snack or side dish. But have you ever thought about turning them into bite-sized appetizers? I am using frozen shredded hashbrowns for this recipe but you can also use fresh or shred your own.

Bacon

Bacon makes everything better, am I right? I like to use regular center-cut bacon for this recipe, but you could also use turkey bacon or even leave it out if you’re looking to make a vegetarian version.

Sour Cream

I’m using a light sour cream to save on calories, but you can use regular or even Greek yogurt. The sour cream is going to help hold these together and give them a creamy texture.

Cheese

I’m using sharp cheddar cheese, but you can use any type of cheese that you like. You could even mix in some different cheeses for a fun twist.

Egg

The egg is going to help bind everything together. I like to use 1 whole egg, but you could also just use egg whites if you’re looking to cut back on the calories.

Seasoning/Chives

I’m using a simple seasoning of salt, pepper, and garlic powder. You can adjust the amount of each to taste. I am also using chopped chives to add a little extra flavor and color. You can use fresh or dried chives or leave them out completely if you don’t want to use them.

Ingredients

  • 4 Cups – Shredded Hasbrowns (frozen or fresh)

  • 4 Slices – Center Cut Bacon (bacon of choice)

  • 1/2 Cup – Light Sour Cream

  • 1/2 Cup – Shredded Sharp Cheddar Cheese (or cheese of choice)

  • 1 – Egg

  • 2 Tbsp – Diced Chives (fresh or dried)

  • Salt, Pepper, and Garlic Powder To Taste.

Directions

Step 1

Cook bacon in a skillet until done to your liking. Place bacon on paper towels or rack to drain and then chop into bite size pieces.

Step 2

Add hashbrowns, sour cream, grated cheese, egg, bacon, and seasoning to a mixing bowl and mix until combined.

Step 3

Begin rolling the hashbrown mixture into balls in your hands or with a scooper. *for best results the hashbrown bites should be 1-2 inches*

Step 4

Preheat the air fryer to 400 degrees. Lightly spray the air fryer basket with oil and add the hashbrown bites. Cook for 12-15 minutes turning once halfway through.

Notes

  • When using frozen hash browns, you will want to thaw them out for at least 30 -45 minutes in advance to make them easier to roll.

  • If you want to add even more to your breakfast bites try adding some diced onions, diced tomatoes, or a few diced jalapenos if you want a little kick.

  • If you want to add a really pleasing visual when serving, top them off with some finely chopped parsley and add grated cheese such as parmesan.

Cook for 10-15 minutes or until warmed through. If you’re reheating them in the air fryer, heat them at 375 for 15-20 minutes, turning once halfway through.
