Crispitos With Buffalo Chicken (Quick, Easy, And Delicious)

Do you love crispy, cheesy Mexican food? If so, you’ll love this crispitos recipe! Crispitos are a delicious and easy-to-make Mexican dish that can be made with chicken, pork, or beef filling. They are perfect for a quick and easy weeknight meal. This is a quick and easy recipe that will result in delicious crispitos in 20 minutes.

Most of us remember crispitos from the school cafeteria or a gas station hot case but that doesn’t mean we can’t make them at home. The benefit to making them at home is you no longer have to wonder what is the mystery meat they put in these things and why is it so good. You can use any filling you prefer whether it’s ground chicken or a beef mixture. In this case, its shredded buffalo chicken but you can use the same methods below to customize your very own at home crispitos.

I am using Tortilla Land flour tortillas for this recipe because they are the best store-bought tortillas I have found that works for this recipe because they aren’t already cooked. You can use corn or flour tortillas, but I would recommend using these raw flour tortillas for a couple of reasons. These are unbaked tortillas and that makes them ideal for frying and getting that nice crispy exterior that you want when making crispitos. They also won’t unroll like normal tortillas will when you begin to fry them because you can pinch the dough together before adding them to the oil.

I am using rotisserie chicken for this recipe in the spirit of making them as easy as possible to make, but you could also use beef, pork, or cook your chicken at home. If you are using chicken, I would recommend using boneless, skinless chicken breasts. Whatever protein you decide to use be sure that you can easily shred it because shredded meat is the easiest way to fill these crispitos and provides a great texture when eating them.

Seasoning/ Sauce

I am using a combination of buffalo sauce and cream cheese for the filling along with the chicken to create the meat mixture because it is quick, easy, and provides a great flavor. I am also adding a little Mexican cheese to the top of the mixture which helps bind everything together while adding more flavor.

Ingredients

  • 1lb – Cooked Chicken ( I used rotisserie chicken)
  • 3 TBSP – Cream Cheese ( I used 1/3 less fat cream cheese)
  • 1/4 Cup – Buffalo Sauce ( I used Franks)
  • 1/2 Cup – Reduced-Fat Mexican Shredded Cheese
  • 8 – Tortilla Land Tortillas *recommended*
  • Cooking Oil For Frying (I used vegetable oil)

What You Will Need

Step 1

Add the chicken to a mixing bowl with the cream cheese and hot sauce. Use a hand mixer to mix the chicken with the cream cheese and buffalo sauce.

Step 2

Add 2 ounces or 1/8 of the shredded chicken mixture to each tortilla. Top with cheese and roll tightly.

Step 3

Pour a thin layer of oil into the frying pan and set your temperature to medium heat, depending on your stove you may need to set it to medium-high heat. Place your tightly wrapped crispitos in the hot oil and fry until golden brown on all sides.

Step 4

Remove crispitos from the oil and place on a paper towels to dry. Serve and Enjoy!

What Are Crispitos Made Of?

Crispitos are essentially rolled tacos, similar to a taquito. You can add your preferred filling such as ground beef or pork into a tortilla and then roll it tightly and fry it. This is what gives it a nice crispy exterior.

Do I Have To Use Chicken In My Crispitos?

No, you could also use ground beef, shredded beef, pork, or even steak.  Whatever protein you decide to use be sure that you can easily shred it because shredded meat is the easiest way to fill these crispitos and provides a great texture. Also, be sure that your ground beef or whatever protein you are using is cooked before adding it to the tortilla. 

What Toppings Or Dips Go Good With Crispitos?

Anything you like! Try them with sour cream, salsa, guacamole, cheese sauce, or just plain old shredded cheese. Get creative and enjoy!

Can I Make Crispitos In An Air Fryer?

Yes! If you’d like to make your crispitos in an air fryer, cook them at 400 degrees for about 15 minutes. Lightly spray the outside of the tortilla with oil or your tortilla won’t brown up and become crispy. Also, be sure to flip them once during cooking so that they cook evenly.

Can I Make Crispitos In The Oven?

Of course! If you’d like to make oven-baked crispitos, cook them at 400 degrees on a foil-lined baking sheet for about 20-25 minutes. Don’t forget to spray the baking sheet lightly with oil to help them brown and prevent sticking during cooking. Be sure to flip them once during cooking so that they cook evenly.

Can I Make Crispitos Ahead Of Time?

Yes! If you want to make these ahead of time you can prepare them as directed above and store them in an airtight storage container until you are ready to fry or air fry them.

Leftover Crispitos?

Crispitos may be best when they are served fresh but you can certainly save the leftovers for a quick meal. Place leftover crispitos in an airtight container and reheat them in an air fryer later for best results. If possible wait for the crispitos to cool down before storing them so moisture doesn’t build up in the container and make them soft.
