You can usually find different variations of this sauce in most grocery stores. If you can’t find chipotle sauce at your local grocery store, you can easily make it at home.
What Tortilla Should I Use?
For this recipe, we are using a carb smart tortilla because they only have about 70 calories each. However, you can use any type of tortilla that you like. Flour tortillas work best for this recipe but if you’re feeling adventurous you could try corn tortillas. If you want a larger quesadilla, you may want to use a burrito size tortilla.
What Cheese Works Best?
We like to use Mexican or cheddar cheese in our quesadillas because they compliment the sauce nicely, but you can really use any type of cheese that you like. If you want a little extra flavor or spice, try using pepper jack or jalapeño Jack cheese.

- 1 egg white
- 1tbsp light sour cream
- 1tbsp chipotle sauce
- 1/4 cup Reduced-Fat Mexican cheese

- Mix sour cream and chipotle together in mixing bowl until combined.
- Mix egg and egg white together in other mixing bowl until combined.
- Preheat pan on the stove to medium heat.
- Add egg to the pan and evenly distribute across pan, place tortilla on top of egg while it cooks.
- Cook for 1-3 minutes or until the egg is cooked.
- Flip the egg and tortilla over in one motion so that the tortilla is now on the pan and the egg is facing up. Reduce heat to medium-low.
- Spread your chipotle sauce over the egg and sprinkle cheese on top of sauce.
- Fold the tortilla in half once and then fold in again. Brown both sides of the tortilla serve.
Notes
- The thinner your egg is in the pan, the easier it will be to fold.
- When spreading your sauce, don’t go all the way to the edges as it will push itself out of the quesadilla as you fold it.
