I am using partially thawed, frozen boneless skinless chicken breast in this teriyaki chicken stir fry recipe. This makes it easier to slice the chicken thinner and evenly. If you prefer, chicken thighs would also work well for this recipe. You can use fresh chicken breast or chicken thighs as well but having them partially frozen does help.

I like to include a mix of colorful vegetables in this chicken teriyaki stir fry, such as red and green bell peppers and broccoli. However, feel free to add whatever vegetables you have on hand. Carrots and snow peas are also great options!

Sauce

For the teriyaki sauce in this teriyaki chicken stir fry recipe, I am using Bachan’s Japanese bbq sauce. This is an amazing universal sauce that feels like teriyaki sauce with a twist and is perfect for stir fry. However, you can feel free to make your own homemade teriyaki sauce if you prefer. 

Noodles or Rice

This chicken teriyaki stir fry can be served over either noodles or rice, depending on your preference. I like to serve it with yakisoba noodles but if you prefer rice you can serve it with steamed jasmine rice, brown rice, or any of your favorite steamed rice varieties. If you are looking to lower the calories in this dish an excellent and easy option is cauliflower rice. If you have time you can make nice fried rice to go with it as well.

Ingredients

  • 1 1/2 Lbs Chicken Breast (preferably partially frozen)
  • 1 Tbsp Corn Starch
  • 1 Red Bell Pepper
  • 1 Green Bell Pepper
  • 1 White Onion
  • 1 16 Oz Bag of Frozen Broccoli 
  • 15 Oz Yakisoba Noodles (or rice if preferred)
  • Bachans Japanese BBQ Sauce (or teriyaki sauce of choice)
  • Salt to Taste

Step 01

Cut the chicken breast into thin slices and place in a bowl. Lightly season the chicken with salt and mix. Add the cornstarch and mix well until the chicken is evenly coated. Set aside.

Step 2

Slice the bell peppers and onion and add to the skillet on medium heat. Add broccoli, 1/2 cup of water, and season veggies with salt. Cover and reduce heat to medium-low. Steam veggies for 5-7 minutes or until tender. Remove from heat.

Step 3

Preheat a skillet to medium-high heat. Add the sliced chicken breasts to the skillet in an even layer. Add 2 Tbsp of the teriyaki sauce. Cook for 2-3 minutes on both sides or until cooked through.

Step 4

Add the cooked chicken to the vegetables and add 4 Tbsp of the teriyaki sauce. Mix well and place on low heat.

Step 5

Heat a skillet on medium heat and add the yakisoba noodles and 2 Tbsp of the teriyaki sauce. Mix well and cook until tender, 2-4 minutes usually.

Step 6

Serve and Enjoy!

Notes

  • Need more Flavor? If you need more flavor you can add more sauce or try using chicken broth instead of water to steam your teriyaki stir fry vegetables.
  • Prefer Rice Instead? If you prefer rice instead of noodles, prepare your rice as desired and serve it in place of the noodles.
  • To Sweet? Add some soy sauce to your teriyaki stir fry. Soy sauce is on the saltier side and can help add more flavor and balance the sweetness.

Can I Use Any Teriyaki Sauce?>

Of course! Use any of your favorite teriyaki sauces or make your own using simple ingredients like soy sauce, brown sugar, fresh ginger, and pineapple if you’re looking to add some fruity flavor to your sauce.

Do I Have To Use Frozen Chicken?

No, you can use fresh chicken if you prefer. The only benefit of having partially frozen chicken is that it is easier to get a nice thin and even slice.

Is This A Good Meal Prep Option?

Yes, this is a great option for lunch or dinner during the week. Be sure to seal your stir fry in an air-tight container.  If possible use a pan to reheat your teriyaki stir fry instead of a microwave for the best texture.

What Are Good Stir Fry Vegetable Options?

Some good vegetable options for stir-fry are snap peas, onions, broccoli, green beans, mushrooms, green onions,  and peppers.

Should I Marinate My Teriyaki Chicken?

You can marinate your teriyaki chicken if you have the time to do so. Marinating your teriyaki chicken for at least 2 hours before cooking will allow it to absorb more flavor and make your chicken stir fry that much more flavorful.
