Chicken

I am using boneless skinless chicken breasts for this buffalo chicken wraps recipe because it’s easy to shred and high in protein.
Buffalo Sauce

I’m keeping it simple here and just using Franks Buffalo Sauce. You can find a wide variety of premade buffalo hot sauce out there if you aren’t a fan of franks. This hot sauce is flavorful and easy to use for seasoning your chicken. If you are feeling adventurous you can also make your own buffalo sauce for your buffalo chicken wraps.
Cream Cheese

Cream cheese is a great way to add a nice flavorful creamy flavor to the buffalo chicken mix. I am using 1/3 less fat cream cheese in order to lower the calories of this chicken wrap but you can use any variation or flavor you prefer.
Cheese

I am using reduced-fat Mexican shredded cheese for this recipe as it has lower calories and Mexican-style cheese goes well with the buffalo chicken. If you prefer something different you could try Colby jack cheese, pepper jack cheese, or just plain cheddar cheese.
Lettuce

Purely to save time I am using pre-shredded iceberg lettuce for these wraps. It’s fast, easy, and gives the wrap a nice texture, and makes it more filling.
Tortilla

I am using burrito-sized flour tortillas for this recipe to create larger wraps. You can of course use any flour tortilla of your choice. If you want to lower the calories of this wrap you may want to try using a carb-balance tortilla or an extreme wellness tortilla.
Broth

Anytime your pressure cooking you need liquid to cook and I prefer to use chicken broth in this recipe. It adds more flavor to the chicken while it cooks and keeps it from drying out.
Sauce

Top off your wrap with the sauce of your choice or some blue cheese crumbles. I recommend ranch dressing or blue cheese dressing but you can use any of your favorites or just add more hot sauce.

Directions:
Step 1
Place chicken breast in a pressure cooker with the chicken broth. Close the lid, make sure the release valve is closed and set it to high for 10 minutes. Once done quick release.

Step 2
Remove the cooked chicken from the pressure cooker and place it in a large bowl. Use a hand mixer or forks to shred the chicken.

Step 3
Add buffalo sauce and cream cheese. Mix well


Step 4
Make buffalo chicken wraps. Layer flour tortilla, lettuce, cheese, buffalo chicken mix, and your choice of sauce, I am using ranch dressing.

Step 5
Wrap Tightly, Serve and Enjoy


What Is Buffalo Sauce?
Buffalo Sauce in its most basic form is a hot sauce mixed with butter. This gives a creamier and savory flavor that works wonders. You can also find other ingredients in buffalo sauce such as vinegar and Worcestershire sauce. Regular hot sauce is great but using buffalo hot sauce is a totally different experience.
Do I Have To Use a pressure cooker?
I highly recommend using a pressure cooker for this buffalo chicken wrap recipe as it is faster and works amazing but if you don’t have a pressure cooker you aren’t out of luck.
You can use a slow cooker and cook the chicken breasts in the chicken broth on low for 4 hours or until cooked to 165 degrees.
Alternatively, if you want to use the stove you can use a skillet. Pour the chicken broth into the skillet with the chicken breasts and cover. Cook on medium heat for 7-10 minutes or until fully cooked.
You can also avoid cooking the chicken entirely if you want. Grab a rotisserie chicken and shred the chicken. Place the shredded rotisserie chicken in a bowl and follow the rest of the directions and your done without having to cook anything.
Can I meal Prep these Wraps?
Of course! These buffalo chicken wraps are amazing for meal prep. Simply warm up the leftover chicken mixture and save it in an airtight container or cover it with plastic wrap. When you are ready to serve just remove it from the airtight container, reheat and make your wrap or eat it cold if you prefer.
