What’s for breakfast? Try this delicious breakfast skillet and forget about searching through the fridge and pantry. Who here hasn’t gotten up in the morning and thought to themselves, what do I have for breakfast? Well if your tired of that question followed by the same cereal or eggs and toast give this breakfast skillet recipe a try and add a new favorite to your breakfast line-up. Eggs, bacon, peppers, onion, and hash browns make this a well rounded all inclusive meal to get your day started even if your not a morning person.
You can easily make this dish in one pan as long as you use a large skillet. A large skillet is important to make sure you have enough room for everything without it spilling over. The type of pan isn’t quite as important but I would use a nonstick pan or a cast iron skillet. Stainless pans tend to stick a lot more than a cast iron skillet or a nonstick pan.
Bacon

I am using center-cut bacon for this recipe. Center cut bacon is just as it sounds, the center of the bacon with the ends cut off. This helps remove some of the fat and calories. If you prefer to use regular bacon or even turkey bacon, both should work just as well.
Eggs

I am using whole eggs here because the yolks add more flavor to complete the dish. If you prefer to use only egg whites that will work also. Just be sure to change your cook time accordingly so you don’t overcook the egg whites.
Potatoes

Is it even breakfast without hash browns? I am using frozen diced hash browns instead of fresh potatoes for this recipe to make it easier than the process of making homemade hash browns. but you can use shredded hash browns as well or make your own hash browns using fresh potatoes.
Peppers

Bell peppers can go with pretty much anything and breakfast is no exception. I am using a red and green bell pepper in this recipe to add some veggies and color.
Onion

I’m using a white onion but you can use any onion you prefer and should get great results. Additionally if you aren’t a fan of onions you can leave them out completely.
Cheese
In order to keep this dish lower in calories, I am using Reduced-Fat Mexican Shredded Cheese. Some other good Shredded cheese options would be Cheddar Cheese, Mozzarella, or Pepper Jack.
Seasoning
Not going to overcomplicate things here, it’s breakfast and everyone is still waking up. Seasoning for this is super easy with just salt, pepper, and garlic powder.

Ingredients:

- 6 Strips Center-Cut Bacon
- 4 Eggs
- 1 Onion
- 1 Red Bell Pepper
- 1 Green Bell Pepper
- 1 Bag Frozen Diced Hash Browns
- 1/2 Cup Reduced Fat Mexican Shredded Cheese (or cheddar cheese)
- 1 TBSP Olive Oil
- Salt and Pepper
- 1 TSP Garlic Powder

Directions:
Step 1
Prepare ingredients by cutting onion, peppers, and bacon.
Step 2
Preheat the skillet to medium heat and add bacon. Cook until desired crispiness. Remove from heat and set aside on paper towels.


Step 3
Return the skillet to heat and add the bell peppers to the skillet. Cook 2-3 minutes and then add the onion. Cook an additional 4-5 minutes or until tender. Remove from heat and set aside.

Step 4
Add Frozen Potatoes to a Mixing bowl. Add garlic powder, salt, pepper, and olive oil. Shake well until coated. Return the skillet to heat and add potatoes. Cook for 10 minutes turning occasionally to cook the potatoes evenly.

Step 5
Add veggies and bacon to the potatoes and mix well. Create 4 wells in the potato mixture for the eggs.

Step 6
Add eggs to the pockets, add salt and pepper to taste, and cover skillet. Cook for 5-8 minutes or until the eggs are cooked through. *If you like your yolks runny, cook for less time.

Step 7
Remove the lid and sprinkle cheese evenly on top of the mix. Allow cheese to melt and remove from heat. Serve Immediately and Enjoy!

Notes:
- Save time by preparing ingredients before starting.
- You can scoop out the breakfast mix as is or mix it all together if you want the eggs mixed in.
- Make the dish Vegetarian by removing bacon or using vegan bacon.
- Top it off with some sour cream or hot sauce.
- If you want to keep more flavor in the pan don’t wipe out the bacon drippings.
- If you need to save time, you can make scrambled eggs to add to the mix instead of letting them cook longer.
- Cook for less time if you like over easy eggs.
Meal Prep This Dish
If you are in a pinch for time in the morning during the week you can make this ahead of time and save it in meal prep containers or any airtight container for a quick breakfast during the week. I recommend reheating in a skillet or air fryer for best results but a microwave will absolutely work.
