For the sausage, we are using a breakfast pork sausage. along with the bacon, the sausage will add a lot of flavor to the burrito as well as protein. If you prefer turkey sausage just be sure to check the cooking time as it is leaner and will cook faster.

Of course, no breakfast burrito would be complete without scrambled eggs! We are adding scrambled eggs to ours for a little bit of texture and protein. If you want your burritos to be on the lighter side, you can use just egg whites.
Bell Peppers

Bell peppers are a great way to add some veggies to your breakfast burrito. They also add a little bit of sweetness and crunch. We are using green and red bell peppers in this recipe, but feel free to use whatever peppers you like.
Cheese.
Cheese is always a good idea, especially in a breakfast burrito! We are using reduced-fat Mexican cheese because it has fewer calories and goes great in all burritos. You can of course use any type of cheese you like, such as cheddar cheese, Monterey Jack Cheese, or pepper jack, or omit it altogether.
The Sauce

We are keeping it simple with the sauce because breakfast burritos shouldn’t be difficult. Simply mix sour cream and salsa and you get a nice creamy sauce with some good flavor.
The Tortilla

We are using a carb balance flour tortillas for our bacon sausage breakfast burrito recipe because it is a little bit healthier than a traditional flour tortilla. You can use whatever type of tortilla you prefer, but we think the carb smart tortillas work amazing and you won’t taste a difference. You can also grab burrito size tortillas if you want a bigger burrito. If you want to try something different, use corn tortillas instead of flour tortillas and make tacos. Ingredients:

- 3 Ounces Pork Sausage (sausage of choice)
- 4 Strips Center Cut Bacon (or turkey bacon
- 1 Red Bell Pepper
- 1 Green Bell Pepper
- 3 Eggs
- Salt and Pepper to Taste
- 1/2 TSP Cayenne Pepper
- 2 TBSP Light Sour Cream
- 2 TBSP Salsa of Choice
- 1/2 Reduced Fat Mexican Cheese (or cheddar Cheese)

Directions:
- Prepare your peppers by slicing them into thin strips.
- Preheat the pan to medium-high heat and add bacon and pork sausage. Cook 4-6 minutes or until browned.
- Add Sliced Peppers to the pan with the meat and cook for 3-4 minutes. reduce heat to medium-low.
- Whisk your eggs in a medium bowl. Move the bacon, cooked sausage, and peppers to one side of the pan and pour in the egg mixture.
- Season eggs with salt, pepper, and cayenne pepper and gently stir the eggs until they begin to firm up. Then mix them in with the meat and peppers.
- Once your burrito filling is cooked remove it from heat and create your sauce.
- Mix sour cream and salsa until consistent.
- Add 1/4 of your sauce to each tortilla, spoon in your burrito mix, and top off with 1/4 of your cheese.
- Serve and Enjoy!
Notes:
- Don’t stir the eggs into the rest of the mix until they firm up or you will have a messy-looking filling.
- (Optional) Add some spinach or diced potatoes to your burrito if you want to take it up a notch.
