For these crispy air fryer potatoes, I am using petite red and petite gold potatoes, also called fingerling potatoes. Any baby potatoes variety will work fine and they can be just one variety instead of two if you prefer. If you don’t want to use baby potatoes you can use larger ones like russet potatoes but I would recommend cutting them into quarters instead of halves.

Oil

In order to get a nice crispy exterior, it’s always a good idea to use oil. In this case, I am using olive oil because it gives a nice flavor that matches the seasoning in this roasted potatoes recipe. Some other good oils to try would be avocado oil or if you’re in a pinch you could use vegetable oil.

Seasoning

Keep it simple when it comes to seasoning. Salt, pepper, garlic powder, and some Italian seasoning will give you a nice balance with plenty of flavors and well-seasoned potatoes. If you want to experiment more with seasoning some good options would be smoked paprika, onion powder, chili powder, and fresh parsley.

  • 1/2 lb Yukon gold baby potatoes.
  • 1/2 lb red baby potatoes.
  • 1 tbsp olive oil.
  • 1/2 tbsp garlic powder
  • 1 tbsp Italian herb seasoning
  • Salt and pepper to taste.

Step 1

Preheat the air fryer to 400 degrees.

Step 2

Wash and dry potatoes, and cut them into halves.

Place potatoes in a large bowl, drizzle with olive oil, and toss to coat.

Sprinkle herb seasoning, garlic powder, salt, and pepper over potatoes and toss again to coat.

Place the potatoes in the preheated air fryer and cook for 15 to 20 minutes. Toss or turn potatoes halfway through the cook using a spoon or oven mitts to make sure they cook evenly.

Test for doneness before removing cooked potatoes from the air fryer basket and Serve and Enjoy!

Notes:

  • Make sure your air fryer or oven is preheated. This helps to get a nice crisp texture on the outside of the air-fried potatoes and helps to get a nice even cook.
  • You can use another oil other than olive oil but we recommend using some sort of oil to get a nice crisp texture on the outside of the potato.
  • Top them off with some grated parmesan cheese or another shredded cheese of your choice if you are a fan of cheesy potatoes.
