For these crispy air fryer potatoes, I am using petite red and petite gold potatoes, also called fingerling potatoes. Any baby potatoes variety will work fine and they can be just one variety instead of two if you prefer. If you don’t want to use baby potatoes you can use larger ones like russet potatoes but I would recommend cutting them into quarters instead of halves.
Oil

In order to get a nice crispy exterior, it’s always a good idea to use oil. In this case, I am using olive oil because it gives a nice flavor that matches the seasoning in this roasted potatoes recipe. Some other good oils to try would be avocado oil or if you’re in a pinch you could use vegetable oil.
Seasoning
